Happy Day Restaurants is accepting applicants for the position of Sous Chef/Assistant Kitchen Manager. This position will be a “second-in-command” to the Executive Chef/Kitchen Manager of a high-volume professional restaurant. The successful applicant will be well-versed in standard kitchen procedures and the running of high-volume kitchens, with strong culinary skills and administrative skills including food costing, computer ordering, and inventory management experience.
Duties will include but are not limited to the following:
- Manage daily operations and personnel as assigned or in the absence of the executive chef or kitchen manager,
- Help create and refine menu items and specials,
- Maintain cleanliness, sanitation standards, and personal hygiene and health standards in the kitchen,
- Train and monitor kitchen staff for quality of work and on specific skills (knife, grill, expo, prep, etc.), and develop training aids,
- Ensure kitchen staff complies with all applicable health codes, food prep and storage guidelines, sanitation regulations, and safety procedures,
- Keep kitchen motivated and on-time for food departures and daily food prep, especially during rush times,
- Ensure all products leaving the kitchen meet Happy Day's high standards for taste and presentation,
- Assist in ordering and managing inventory to ensure freshness, reduce stock, and minimize waste,
- Effectively manage expo position as required, and
- Help create a working environment that encourages employee development to advance to higher culinary service levels, including up to professional chef.
Qualifications and Requirements:
- High familiarity with food preparation and current culinary trends and exhibits a solid knowledge of all food products
- Strong administrative skills including food costing, computer ordering, and inventory management experience
- Highly organized and detail-oriented
- Ability to communicate effectively and respectfully both verbally and in writing
- Excellent time management skills and ability to multi-task
- A team-oriented approach and a calm demeanor during time-sensitive tasks
- Displays leadership skills and must be a self-starter
- Maintains high standards for work areas and appearance
- Maintains a positive attitude and commitment to excellence
- Computer literate and able to learn complex software programs. Familiarity with Excel and other Microsoft products required.
- Must be flexible with scheduling, including weekends, evenings, and holidays
- **Access to reliable transportation required**
- 5 years of high-volume professional kitchen experience. At least 2 of those years will be as supervisory or management level.
- ServSafe certification required

Main Street Grill was opened in downtown Lewiston in January 2000, located in a side-wing of a historic department store known as the Brier Building. In the beginning, seating was limited to just 40 and the menu was limited to only hamburgers. Since this, Main Street Grill has expanded to 180 seats scattered through 4 separate rooms, a mezzanine and an outdoor fenced patio.
Today you can enjoy the extensive menu, ranging from mouth-watering hand-pattied burgers to jumbo wraps, char-grilled steaks and seafood. A full-line breakfast is served starting at 7:30 am on the weekends.
